The American Jewish population is one of the biggest in the world. More players to pick from means better odds of getting tall talented kids. Also basketball isnt big in Mexico, most of their best athletes gravitate towards soccer and maybe baseball.
Well, in terms of this being the Jewish Olympics, yeah. That's what it is. As @TheJuice said, much larger population to pick from in a country that loves basketball. It's not that hard to fathom really. I didn't realize these games were still happening. I tried out for the US soccer team back in the early 90's. Heck, I was surprised at how many really good players there were that were also Jewish. I thought I had a good shot but I was still in high school going up against a bunch of D1 players.
Reminds me of how the Israeli World Baseball Classic team was surprisingly competitive...because it was a bunch of Jewish Americans who played in college. I don't think any of the players were actually Israeli, at least in the way we would usually think of.
