Now how you gonna cook it? The only seafood (I know, alligator /= seafood) I can think of that you really have to be careful with in the freezer is head-on shrimp. There's something in there that degrades pretty rapidly and will totally f'up your stuff.
We deep fried it, came out pretty good. Funny you mention shrimp cause yesterday I threw out 10 lbs of it freezer burnt and all from Feb 2021. I'll never keep seafood at the bottom of my deep freezer ever again.

Amazingly, I've never tried frog legs. I've tried alligator a few times, but both times it was fried, and one of those times, it was fried a bit too much. Now you've got me watching "how to skin an alligator" videos on YouTube (again). I don't know how I get into this mess.
