Doing some eggs benedict this morning, plus liquor. Go Astros!!

    First thing first, I went for the bloody mary mix but I also sub some for spicy V8 and add a **** ton of cayenne pepper to it. Don't get me wrong, this thing will ****ing make your mouth feel like you just got done sucking off a jet engine, but that's sort of the whole point to it because it wakes you up pretty well and also gets rid of any hangover effects (at least for me). I added fresh veggies as well but they were cold left overs, green beans and carrots.

    As for the eggs benedict, my significant other makes them and they come out very good too. The trick is to use anchovies and capers in the sauce and a **** ton of butter, lemon and koshner salt. Mix it nice and let it simmer briefly. You want to poach at least 4 eggs and grab a packet of the english muffins. Then mix it all together and maybe add a side of corn beef hash to it.

    Have you ever tried putting some small avocado chunks in your bloody mary? It might sound weird but it's delicious...also a huge fan of pickled okra in that shiz.

    Sounds like you're having a pretty nice morning, but no avocados OR toast!? Disappointed I say...

    Word. Zing Zang is my go-to. Add celery salt and horseradish (Beaver Brand Extra Hot is the only horseradish to buy). Pickled okra and/or green beans, lime wedge and a couple of celery stalks.

    Spicy V8 is delicious, I drink that stuff even without the booze.

    This thread will be dominated by the Bloody Mary side of the conversation

    So for the Benedict fans, I'll add: Did you know Hollandaise sauce is just Mayonnaise with Butter instead of oil? Hope that doesn't ruin it for you.

    So, poached eggs and ham on toast smothered in mayonnaise. Luv it.

    Betcha ppl make a version now with Avocados on the bottom, and call it Avocodo Toast with Ham and Egg.

    Crab cakes or salmon is a great substitute for the ham.

    I have been known to blend avocado into my hollandaise.

    Yeah, that stuff's fine. I like to doctor mine up myself with goodies & spices so the Zang works for me.

    Ever made you own pepper infused vodka? Try it.

    Double white russian with a shot of espresso (or just strong coffee) in it is a wonderful weekend breakfast drink.

    sounds good. you ever try a wee bit of chipotle...like ppl do with mayo.

    Some ppl claim you can emulsify avocado and oil/butter as a replacement for the egg yolks. I'm not so convinced. Probably just has the same thickness, but not really an emulsion as it probably will separate. But you can buy avocado oil to emulsify with the egg yolk. probably doesn't have the full avocado flavor one is looking for though.

    I think I do prefer just classic sauce though, and doctor up the Benedict with alternative ingredients to ham, like your other suggestions. New Orleands (where Benedict was invented) does indeed have several different types, like Eggs Sardou, for example. I don't like messing too much with such a classic sauce, or at least if I do, I won't still call it Eggs Benedict...out of respect for whoever invented Mayo and Hollandaise.

    Haven't done the chipotle, sounds good though, but I've been known to put a bit of thick chipotle or some such salsa under the egg if I'm going TexMex with it.

    Avocado oil is great stuff. I use it in a few salad dressings instead of olive. High smoke point too, for sauteing & such. And no, it doesn't have a crazy strong avocado flavor.

    Also good late night.

    Trying one now with the coffee as an experiment (don't have any espresso on hand). So far so good, though I think I still prefer them the normal way.
