Except that you also have to protect your cows and chickens from predators, keep them healthy, find good pasturage and water for them, and also make sure they stay together where you can get to them. All of that takes energy and resources. Further the grain fed to animals could also go humans and you have to factor in the resources used to grow that grain. You raising some cows and chickens is very different than trying to raise them in a pre-industrial society where you are doing so for subsistence. Meat has always been more energy and resource intensive to raise than staple crops like grains and pulses. One reason why agriculture societies have historically had far greater populations than hunter gatherer or herding societies.
I would agree with you to an extent. As others have noted the FDA guidelines are heavily politicized. I think the biggest problem is that there is so much inertia in them that it takes a long time for things to change. The latest guidelines of eating a balanced diet I don't think is bad but is too simplistic.

Our bodies are designed to store excess calories as fat so if all you ate was grains and potatoes far in excess of your daily metabolic needs those would be stored as fat. I agree highly processed foods are more likely to make you fat because they will have more easily digested sugar and fat. They also tend to make us eat more as they are more flavorful than just plain potatoes and grains.

Strawman...??? Says the guy who says American citizens don't have the right to know and or decide for themselves if they want to eat GMO's or not to protect the corporations.

You do know that some of those countries on the list you posted have bans on GMO's... But science is not my argument... My argument is that people should have a choice on rather or not they want to be experimented on.
