Really enjoyed this dish when I was in the Alcace region of France a couple of months ago. It's a lot like a really thin crust pizza, but the crust is much lighter, with less cheese than a typical pizza. Anyone here familiar with this dish and know a good place in H-Town that serves it?

simply look for a pizza place which serves the lightest, crispiest,and thinnest crust here in houston

Poor OP. You might have gotten a better response had you said you had the Flammkuchen when traveling in the Swabian region of Germany, then shown this picture. It's good, and no, I haven't seen it in Houston. And seriously, you might have better luck looking for it at German restaurants. It's doubtful French restaurants in Houston will be selling pizza. In fact, I dare you to go to Bistro Des Amis in the Village and ask them if they serve it.
