    White at the actual table. It always needs gravy regardless of doneness. (Although I'm having mine deep fried in cajun goodness...)

    But the day after.... When nobody is looking? Grab some of the dark meat that has been soaking in the juices the entire time that upper meat was served.

    What's the saying? Once you go ____, you never go back?

    With turkey, it's entirely true...
